Preheat oven to 350 degrees.
Mix flour and salt and set aside.
Add almonds to the food processor and process until a finely coarse like flour is made. Set aside.
In a stand mixer or using a hand mixer, cream together butter, powdered sugar and vanilla until fluffy.
Next gradually add flour and salt mixture.
Then add the finely ground almond mixture.
Beat until it is mix well.
Roll dough into balls about 1 Tablespoon and place on cookie sheet lined with parchment paper or a silicone baking mat. (You can use a measuring spoon.)
Bake at 350 degrees for 14-15 minutes or until the bottoms are a light golden brown. You do not want to over bake the cookies so keep an eye on them.
While the cookies are baking add powdered sugar in a large bowl.
When cookies are finished take out of oven and let cool for about 4 minutes and then gently roll the cookies in the powdered sugar.
Place on wire rack and let cool completely.
