Snowball Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp. salt
  • 2 sticks of unsalted butter softened
  • 1 cup chopped almonds Add to food processor and blend until flout like consistency.
  • 4 tsp. vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup powdered sugar While the cookies are baking add powdered sugar in a large bowl for rolling cookies in after they finish baking.

Instructions

  • Preheat oven to 350 degrees.
  • Mix flour and salt and set aside.
  • Add almonds to the food processor and process until a finely coarse like flour is made. Set aside.
  • In a stand mixer or using a hand mixer, cream together butter, powdered sugar and vanilla until fluffy.
  • Next gradually add flour and salt mixture.
  • Then add the finely ground almond mixture.
  • Beat until it is mix well.
  • Roll dough into balls about 1 Tablespoon and place on cookie sheet lined with parchment paper or a silicone baking mat. (You can use a measuring spoon.)
  • Bake at 350 degrees for 14-15 minutes or until the bottoms are a light golden brown. You do not want to over bake the cookies so keep an eye on them.
  • While the cookies are baking add powdered sugar in a large bowl.
  • When cookies are finished take out of oven and let cool for about 4 minutes and then gently roll the cookies in the powdered sugar.
  • Place on wire rack and let cool completely.
