Egg Roll in a Bowl

This easy low carb egg roll in a bowl is a healthier alternative to your traditional egg roll. It has all the yummy flavor without the wrapper.

Ingredients

  • 1 lb. Ground Chicken You could also use Ground Turkey
  • 14 oz. Coleslaw Mix
  • 1 small Onion, diced
  • 2 Tbsp. Minced Gralic
  • 1 bunch Green Onion, diced
  • 1 Tbsp. Fresh Ginger, grated
  • 2 Tbsp. Coconut Amino
  • 2 Tbsp. Sesame Seeds optional
  • Sriracha Mayo opitional
  • Water Chesnuts, drained optional

Instructions

  • Heat oil in a large skillet over medium heat.
  • Add ground chicken and brown 5-6 minutes or until chicken is alomost done. Season with sea salt and pepper.
  • Add white onion, garlic and giner and saute until fragrant.
  • Add coleslaw mix and green onions (water chesnuts if desired) once the chicken is browned. Cook for 5 minutes or until coleslaw is finished.
  • Divide into bowls and add sesame seeds and or Sriracha Mayo if you desire.

Notes

I did not add the Sriracha Mayo, Water Chestnuts, or Sesame Seeds to the nutritional information. These ingredients are optional. You will need to calculate them if you choose to add them.
