Who doesn’t love an easy homemade dinner without all the work?  I made this slow cooker Rustic Italian Chicken recipe from Red Gold Tomatoes. This simple recipe requires little effort or time to prepare, and is ready to enjoy when you get home from work or running errands.

 

I did another cooking segment on Show Me St. Louis, New Channel 5 showing just how easy this recipe is.

I have made this recipe twice and both times my house smelled amazing. It was so delicious and easy to prepare. My second time making this recipe I decided to use Red Gold Tomatoes Diced Tomatoes with Basil, Garlic & Oregano. I really like how it turned out. That’s just an option.

Ingredients

2 pounds boneless skinless chicken thighs, around 12 thighs
2 large carrots, cut into 1/2 inch slices
1 medium red bell pepper, chopped
1 cup sliced fresh mushrooms
4 garlic cloves, minced
2 tablespoons Italian seasoning
Salt and black pepper to taste
1 (14.5 ounce) can Red Gold® Diced Tomatoes (Or another option is to use the Red Gold Diced Basil, Garlic & Oregano)
1 (28 ounce) can Red Gold® Crushed Tomatoes, or 2 (15 ounce) cans Red Gold® Crushed Tomatoes
3 cups penne pasta, cooked and drained

Directions

  • Spray slow cooker with cooking spray. Place chicken in slow cooker and top with remaining ingredients, except pasta and garnish.
  • Cover and cook on LOW for 6 to 8 hours. Serve chicken over pasta and garnish with cheese and parsley.

Garnish Options: Parmesan cheese and chopped fresh Italian parsley
