Chicken Nachos

I have been craving some yummy nachos and just couldn’t bring myself to order them the last couple of restaurants we have been to.  I decided to make my own after looking on Pinterest for a few minutes hours.  This was super easy and I threw it together at the last minute.  The best part about this recipe is  it can be use this for nachos, soft tortillas, tacos or enchiladas.  My hubby made a soft tortilla and then nachos.
Ingredients:
  • 3 boneless skinless chicken breast
  • season chicken with taco seasoning
  • 1 can of diced tomatoes (14oz)
  • 1 can of black beans rinsed and drained (14oz)
  • pinco de gallo mix (most stores have this already made)
  • sour cream
  • sliced olives
  • shredded cheese – mexican, cheddar or pepper jack
  • tortilla chips (the kind I used tasted like restaurant chips)
Directions:
Season chicken breast with taco seasoning.  Place chicken in crockpot.  Stir in diced tomatoes and black beans.  Cook on high for 3 – 4 hours or until chicken is done.
Cut chicken when done and add crockpot mixture to tortilla chips.  I used a slotted spoon so I did not have a lot of juice on my chips.  My hubby chose to use the juices on his.  Add shredded cheese and melt in microwave if desired.  Add pinco de gallo, olives and sour cream.  YUM!!
Other toppings can include fresh jalapeños, salsa or refried beans.  So many ways you can do this recipe.  Enjoy! 🙂

    This looks yummy… I love chicken nachos! Normally I take the lazy mommy route and pick up a rotisserie chicken from the store, but I will definitely give this recipe a try.
